At the risk of sounding immodest, I consider myself pretty well versed in spices and exotic ingredients--yes, I have a masala dabba--but I came across plenty of new culinary delights in Nandita's book. I love basil leaves, but I had no idea the seeds were also used in cooking; I've long been a fan of water chestnuts, but I had no idea they can be made into flour. And lichen is edible?? That's now on my list of Fantasy Foods To Try!
